Creamy Cauliflower Soup

Servings: 4

Ingredients:

  • 1 head cauliflower
  • 1 potato
  • 1 sweet onion
  • 1 cup almond milk
  • 2 cups chicken or vegetable broth
  • 1 tbsp apple cider vinegar (optional)
  • 1/4 cup red wine (optional)

Instructions:

  1. Cut the cauliflower into florets and steam it.
  2. Dice the potato and steam it.
  3. DIce the onion and saute it.
  4. Add all of the ingredients into a food processor or blender. Mix until smooth.
  5. Garnish with coconut cream and parsley.
  6. Serve!
